Over the years, three dishes at The Lighthouse have quietly outpaced the rest, ordered time and again until their place became a matter of record rather than opinion. The Lighthouse Three gathers them at last into a single, considered sequence, an edit of the menu written by the guests themselves.

It begins in a lighter register. The Avocado & Corn Salad arrives cool and composed, cherry tomatoes and baby rocca given definition by a whisper of red chili, an opening that clears the palate rather than crowds it. From there, the Truffle Rigatoni deepens the mood, mushrooms and cream folded into a quiet richness and crowned with fresh truffle shavings and fine shallot rings. And in closing, the Sticky Toffee Pudding, warm, dark and unhurried, arrives beneath vanilla bean ice cream that yields slowly into the sauce, the kind of ending that lingers after the last spoon.
